A Simple Lunch for Australian Hikers

We recently hosted a lunch for a group of Australian hikers exploring the Coromandel and Auckland region, in collaboration with our partner Nature & Nosh. We welcomed the guests with homemade Mead made of native Manuka honeycomb and Kumerahou herbs. Their wonderful Nature & Nosh guide, Kim, then took the hikers foraging for more local delicacies as they continued their conversations from the hike.

The lunch menu included Pohutakawa-smoked salmon with Kawakawa pesto on sourdough, Danish salami with curry remoulade, pickled Mamaku fern, and native Wood Ear fungi. Three different types of cheese were also available, along with a fresh green salad featuring native Hangehange. For drinks, we offered native foraged tea with local honey and water. The dessert was a carrot cake with Horopito spice.

After lunch, guests chose between weeding, tree planting, or simply relaxing and enjoying the beautiful surroundings. Or doing the dishes, thanks mate! They all left with a small taste of the authentic New Zealand Rainforest Cuisine.
